Sweet Cashew Stir-fry

Cashews are the best nut I think. This is why this is my favorite stir-fry. I could end it there, but just to tempt you more did I mention that this stir-fry has cashews? Finished.

Ingredients (serves 6):
Sauce:
1/2 cup ketchup
2 tblsp soy sauce
1/2 tsp salt
3 tbsp brown sugar
2 tsp sesame oil
1/4 tsp cayenne pepper
1/4 cup vegetable broth
1/2 cup orange juice


The Fry:
1 package of tofu (you need to slice it into about 6 rectangles, squeeze out the excess water, and cut into 1 inch squares)
2 tblsp oil
2 tblsp flour
1 tblsp minced, fresh ginger
 1 tblsp minced garlic
1 onion, chopped
2 red peppers, chopped
2 carrots, chopped
2 cups snow peas
1 cups cashews
sesame seeds

1) Mix all sauce ingredients together with a whisk, set aside.
2) Fry tofu bits and oil in a large pan. When tofu is browned on all sides, add flour and mix to coat. Add onion, and fry until translucent. Add peppers and carrots for about 3 minutes. Add snow peas for 1 minutes more. Add sauce and stir to coat. Allow sauce mixture to thicken (takes about 3 minutes). Add cashews, and stir to coat. Serve with rice, garnish with sesame seeds. Enjoy!
